I have been making marmalade using the bitter oranges from Ave Maria Farm for almost 30 years. During my first visit to Ave Maria Farm in December 2014, I fell in love with the home of Seville oranges, the very best for making marmalade.

The quality of the organic oranges grown at Ave Maria is at a premium. At the end of my tour from tree to packing area, I wondered what it would be like to teach marmalade at Ave Maria ; a prime example of the field to fork philosophy. I am unaware of anywhere else in Spain where this happens, and I look forward to a time when I can be a teacher as well as a visitor.
