Of all the preserves, chutney is the one most frequently mis-understood and mis-represented. Chutney is a savoury preserve, made from fruit and vegetables, cooked in vinegar, sugar and spices. Smooth in texture, the flavour is a balance of all the ingredients in the recipe, and either hot or mildly spiced. Chutneys take time to prepare, cook and mature before they are ready for eating. Quicker recipes are often relishes, not chutneys. They are often eaten on the day they are made or refrigerated for a few weeks. Traditional chutneys, correctly made and stored will keep for years.
